I have never faced with such requirements.
From my point of view it is to excess to have a separate POD instance for IVRs.
But in general, I think that it is possible to create a docker image with all stuff.
There is no special document about it. You can share your experience after you try it.

We have migrated IVR application to the 8.1.1 runtime.

Framework runtime version (scert.jar) : 08.11.08.01

Application Logging Client version (VPAppLogClient_x.x.x.jar) : VPAppLogClient_8.1.1.jar
Java version: 1.8.0_292
Axis/Axis2 version: Apache Axis version: 1.4 Built on Apr 22, 2006 (06:55:48 PDT)
Apache Axis2 version: 1.7.9 Built on Nov 16, 2018 (12:01:54 GMT)

But in the library dependency section we have the following errors\warnings:

We have migrated to the log4j2 totally and we have no log4j-1.2.15.jar in the dependencies of our IVR app.
How to understand why we see this error?
In the same time IVR does work correctly.

The second question is: after installing runtime for 8.1.1 in the tomcat we still have an old version of library VPWebServiceClient-07.22.04.01.jar
Also we see the warning about VPAppLogClient_7.2.3.jar. And we cannot understand where we can get a new VPWebServiceClient jar? May be for 8.1.1 there is no such library with a version 8.1.1?
And why we see such warning:

I understand what is Servlet node (Java custom code as well) and what is session variables and how to work with them.

And seems that I can use the following:
<sip>.unknownhdr[array].name
<sip>.unknownhdr[array].value

But do I correctly understand that I can get the value in Servlet node with code:
IVariable varName = mySession.getVariable("<sip>.unknownhdr[0].name");
IVariable varValue = mySession.getVariable("<sip>.unknownhdr[0].value");

If everything does work in your environment but does not work in customer's environment then your and customers environments are different. Sorry for obvious fact.
But you have to check: MPP in your environment and MPP (MPPs) in customer environment. If you have record from time to time then the problem could be in MPP. Let me guess: you have 1 MPP in your development environment but customer has two or more MPPs. Right?
If I wrong then you could check voice browser logs at MPP side to find out what is going on...

Also, of case you need to provide info in previous post.

But how to get SIP header within IVR app when the call is arrived, right after AppRoot?
